Abstract: There is provided a coated confectionery having a high protein content, wherein a core compound containing albumin is coated with a fat containing pliable, soft caramel compound. The albumin may be present in both the core compound and the coating compound. The albumin may be in the form of hydrophobed albumin particles.
Abstract: Xylitol and sorbitol, when present in edible material, have the advantage that they do not decompose to form products attacking the dental enamel, but difficulty has been experienced in their use in confectionery material due to their instability or the fact that they may contain constituents not permitted by food laws. The invention provides a chewy sugar-free material based on sorbitol and a sugar-free swelling agent which has the required plasticity and cohesion so that it can be formed into attractive chewy sweets or hard sweets or gum, and furthermore the tendency of xylitol to recrystallize is suppressed, by the use of a swelling agent which may be carrageenates, pectins, agar, alginates such as sodium alginate or potassium alginate or calcuim alginate; carob bean flour, tragacanth, methyl cellulose, carboxymethyl cellulose, gelatine, gum arabic and/or low-sugar maltodextrin.
Abstract: A shipping and counter display package, particularly for chocolate bars, in which a carton is provided with a detachable section on its front side. This detachable section covers a crease line located on the bottom side of the package. Symmetrical with the crease line, there are provided in the carton, two slide-in cardboard trays holding a plurality of candy bars and having bent-up rims touching one another. A metal strip is attached on the inside of the rear of the package carton, and covers partially the crease line. The metal strip is connected to the package carton, and is used for holding the package in a display position. The metal strip may be made of sheet aluminum, and is pasted to the interior of the rear side of the package. The detachable section has a rectangular shape, and is located in relation to the crease line so that the candy bars of both trays are partially exposed after the detachable section has been removed.
Abstract: Apparatus for the production of hollow confections provided with center fillings including conveyor means with centrifugal molds mounted thereon, each mold being fitted with one member of a clutch which moves over a rotary drive comprising the other member of the clutch so that the two clutch members can be brought briefly into engagement for rotating the molds, the two clutch members being displaceable in the conveying direction and being adapted to pull themselves into axial alignment when they engage.
Abstract: Method and apparatus for producing individually wrapped confections in centrifugal molds by inserting a wrapper material into the mold, introducing a portion of flowable confectionery mass into the upwardly open wrapper and then rotating the mold to distribute the confection over the bottom and sides of the wrapper, setting the mass, filling the hollow case of confection thus formed and then sealing the projecting edges of wrapper material and removing from the mold.
