    Abstract: An overhead conveyor and wash assembly is provided for a citrus oil extractor. In one embodiment, a spray manifold is connected to a drive chain and has nozzles for applying a cleaning solution and water to the extractor rollers. A wiper bar assembly is pendulously suspended from the spray manifold and conveys citrus fruits through the extractor as needed. The wiper bar assembly is moved to a raised position to be retracted to the input end of the extractor. A second embodiment uses a spray manifold pendulously suspended from drive chains and conveys citrus fruit through the extractor as needed and also sprays cleaning solution and water as needed.

    Abstract: A two stage system for extraction of oil from whole citrus fruit is provided. The first stage is known in the art and includes a first plurality of toothed rollers which convey citrus as the teeth penetrate and rupture oil glands. The oil passes into a first water pan. A novel second stage uses a second plurality of toothed rollers to continue the penetration and rupturing of oil glands. The second plurality of rollers are positioned in an isolated second pan to partially submerge the citrus. A middle phase liquor with extremely low oil concentration is transferred into said second pan to initiate desorption of oil from the citrus. The desorption technique in one embodiment increases yield by 4% or more. This technique is expected to increase yield even more as the recovery by the first stage is reduced.

    Abstract: A washer for a fruit processing machine includes a rotary nozzle paddlewheel gear mounted in a nozzle housing. The rotary nozzle paddlewheel gear meshes with combination gears which in turn mesh with a wash nozzle. Fluid pumped into the housing drives the gears and blows out through the rotary wash nozzle creating a spray pattern. As the rotary wash nozzle completes a revolution, a hemispherical or larger region is sprayed by the fluid, cleaning the equipment to be washed.

    Abstract: A method and apparatus are disclosed for automatically cleaning extrusion screens in finishing machines of a type having a generally cylindrical perforated screen arranged in a housing, juice or the like laden with solids being introduced into the interior of the screen and urged against the screen by a screw element, paddle assembly, or the like to cause the juice to flow through the screen with the solids being retained on the screen. The cleaning method and apparatus comprise a cleaning unit with a plurality of spray nozzles arranged about the screen, the cleaning unit being moved back and forth along the screen by a reversing motor additionally controlled by suitable limit switches. The method and apparatus of the invention are preferably adapted for causing relatively increased cleaning action adjacent a solids outlet end of the screen to better remove larger amounts of juice solids or pomace deposited on that portion of the screen.

A fail-safe control is also provided for establishing a predetermined setting for the actuator means if the differential electrical signal exceeds predetermined limits.

    Abstract: A process for forming a citrus juice extender substantially from natural components of citrus fruit wherein flavedo from the citrus fruit is comminuted and combined with an acidifier such as citric acid and sodium citrate as a buffering agent, sufficient water being added to maintain liquidity of the combination. The combination is then finished to remove solids, the resulting liquor being pastuerized and homogenized to form the extender. The extender is stored preferably by packaging and freezing it for subsequent combination with a sweetener and a substantial amount of water to form a diluted and sweetened extender, having citrus flavoring and color as well as cloud forming agent provided by the comminuted flavedo portion of the extender, which is then blended with an initial citrus juice to form a citrus extended product.

The toothed rolls define bights between them for reception and support of whole citrus fruit. A motor rotates the rolls in the same direction at different speeds. Water spray nozzles are spaced above the rolls to deliver relatively coarse sprays against the outer surface of each whole citrus fruit to carry away peel oil produced by the pointed teeth of the rings.
