Abstract: The open-front food display cabinet of the present disclosure has one or more food display compartments. Each compartment has a shelf on which food products are placed and an air duct that circulates conditioned air throughout the compartment. The compartment is further defined by the side and rear walls of the cabinet. A fan and air conditioning device circulate the conditioned air into the air duct and compartment through an exit port of the duct. A profiled diffuser is connected to the air duct port and bends away from the duct port and ends thereof, so that more air enters the sides of the compartment. The duct port may also be profiled so that more air passes through its sides than its center. Other features to assist with even air flow and temperature profiles include perforations in the air duct, baffling the air flow in the duct, and adjusting the fan output.
Abstract: A system for storing food products at predetermined temperatures includes a food product receiving holding cabinet, a first storage bin in the holding cabinet for receiving a tray, a temperature control device that is in thermal communication with the tray, and a controller that transfers a selected timer by touching a user interface of the holding cabinet, thereby designating the selected timer for transfer to be associated with the first storage bin.
Abstract: There is provided an oven having an oven door assembly connected to a housing. The housing surrounds an oven interior and has an opening into the oven interior. The door assembly has an oven access door that covers the opening in the housing in a closed position. The oven access door moves in a first direction from a closed position to an open position uncovering the opening into the oven interior. The oven has a depth in the closed position. The oven access door moves in the first direction from the closed position to the open position within substantially the same depth of the oven in the closed position.

Abstract: A smoker device having a low profile fits beneath the lower most rack of an oven thereby allowing full use of all possible shelves of the oven. The smoker device comprises a uniquely shaped bi-level heater element that allows the smoker device pan to be cradled just above the bottom wall of the oven chamber. A method and system allow a processor control of the smoker device manually or automatically as a part of a programmed recipe.
