    Abstract: A cover unit for a food warmer of the type comprising a food container. The cover unit comprises a frame for connection to the food container, a plurality of door members slidably supported on the frame and independently movable relative to said frame and to each other selectively to close said opening and to allow a selected amount of access to the food container. A pair of track members are provided for supporting and guiding each of the door members, with the track members being selectively connectable and removable from the frame and from the door members, to enable assembly and disassembly of the frame, the track means and the door members. The key components of the cover unit, i.e., the door members, track members and frame are formed, essentially of sheet metal parts, to facilitate manufactue of those components.

    Abstract: A gas-fired convection oven for processing food, for example, having a fan for moving air along a circulatory path over, along and about the food to be processed. A package type gas burner outside the oven is directed into a heat exchanger tube of substantial length extending into the oven. High-temperature exhaust gases are discharged from the burner to be directed through the heat exchanger into the circulatory path of air flowing through the convection oven. Relatively proximate the burner the heat exchanger has a linear portion that is of egg-shaped or elliptical cross section, and that portion is oriented with respect to the outlet of the convection blower and walls of the convection blower chamber to draw air over substantially the entire surface area of such portion for maximum cooling/heat exchange function with respect thereto.

    Abstract: Insulated cabinets with interchangeable heat transfer units disposed on the top thereof are disclosed and means for improving the air circulation both in the heat transfer units and within the enclosed cabinet. The heat transfer units may be refrigeration type units, freezer type units, heating type units, warming type units or proofing units. Each of the heat transfer units includes a rectangular opening in the bottom thereof to which is attached a duct through which heated or cooled air is forced. The duct has parallel front and rear walls and inclined side walls which taper to reduce the cross section of the air flow. The duct is a sliding fit inside a tunnel which extends vertically along the back wall of the cabinet. The tunnel is provided with two columns of louvers along its entire length through which the air from the duct flows. Air exiting the louvers is deflected by a baffle plate which extends the full width of the rear of the cabinet. The edge portions of the baffle plate are perforated.

    Abstract: Material on trays or in pans can be stored or transported on a rack which is open at the front and which has horizontal ledges on its sides on which the trays or pans are supported. Construction of the rack can be made easier and more economical by providing slots on the vertical posts of the rack into which horizontal support members comprising the ledges are inserted. Only the uppermost and lowermost support members need be secured in the slots to provide a solid rack frame. Alternative designs of the rack include a multiple unit rack, dual ledges to restrain the tray from tipping when it is less than halfway in the rack, enclosure of the rack to form a cabinet, removable side panels on the rack, and a rack for storing trays vertically.
