The unit comprises a connection for a water supply; an optional sterilisation unit, e.g. in the form of a unit comprising at least one water inlet and at least one hot water outlet for discharging purified water. Further, there is a cooling unit comprising at least one hot water inlet and at least one cold water outlet; a carbonation unit comprising at least one inlet for introducing carbon dioxide into the cold, purified water so as to prepare cold, purified and carbonated water; and a water outlet for the delivery of the cold, purified and carbonated water from the pre-module to a freezing unit of an ice-making unit.

Abstract: An apparatus for the preparation of colored ice cubes (100, 100?, 100?) comprising: a connection for a water supply (10), a heater (20), a single cooler (30), an array of two or more color recipients (50, 50?, 50?), two or more associated mixers (60, 60?, 60?) for mixing the colored water from the recipients (50, 50?, 50?) with water from the single cooler (30), and at least one freezer (70, 70?, 70?) for preparing colored ice cubes (100, 100?, 100?), which is connected to the outlets of the mixers (60, 60?, 60?). Further a method for operating the apparatus for the preparation of colored ice cubes is presented.
Abstract: The present invention relates to a food grade colouring agent for the preparation of coloured ice cubes, wherein the colouring agent comprises dried red cabbage, to a method for the preparation of the colouring agent, comprising the steps of chopping and drying red cabbage, to a method for the preparation of a coloured liquid, wherein the colouring agent is extracted with water and/or ethanol, and to the use of the coloured liquid for the preparation for coloured ice cubes or confectionary.
