    Abstract: Cheese whey is treated to recover protein, convert the lactose to ethanol and recover the ethanol, and to provide a concentrated yeast with fermentation solubles concentrate. A sequence of treating whey by reverse osmosis, protein precipitation and separation, fermentation of concentrated lactose solution, distillation of the fermented product, dehydration of the hydrous ethanol product and evaporation of yeast fermentation solubles is described.
