    Abstract: A device for trussing up poultry parts, the poultry parts having first and second elongated bones with meat attached to the bones. The device includes carrier trays which receive the poultry part. The first and second bones are placed in first and second recesses of a meat stripping tool. A pusher device displaces the first and second bones through the recesses and at least some of the meat is compressed between the at least a part of the pusher device and at least a part of the stripping tool. At least one gripper retracts at least one of the first and second bones from the meat after the meat has been trussed up.
