Abstract: A system for measuring the state of degradation of cooking oil or fat includes at least one fryer pot. A conduit is fluidly connected to the fryer pot for transporting cooking oil from the fryer pot and returning the cooking oil back to the fryer pot. A pump is provided for re-circulating cooking oil to and from the fryer pot. A sensor is disposed in fluid communication with the conduit and measures an electrical property of the cooking oil as the cooking oil flows past the sensor and is returned to the at least one fryer pot.

Abstract: A racking system for a deep fryer, wherein the deep fryer contains cooking oil, the racking system includes a housing; at least one rack that carries a food product; an actuator operatively associated with the rack to raise and lower the rack within the housing. The system further includes a sensor that detects a property of the cooking oil; and a controller that receives a signal to initiate a cooking cycle based on the property and sends a signal to permit activation of the actuator to raise and lower the rack.

Abstract: A system for automatically filling and maintaining fryer pots with oil in a deep fryer having a deep fryer and a plurality of fryer pots disposed within the deep fryer. Each of the plurality of fryer pots contains a first temperature sensor and a second temperature sensor. The second temperature sensor is enabled to commence a filling cycle of a fryer pot in response to said first temperature sensor when said first temperature sensor senses a first predetermined temperature.

Abstract: A fryer system and method of extending oil life in fryer pots by minimizing the effects of oxygenization, hydrolysis and lack of oil replenishment during the cook cycle. The fryer system includes a controller that controls an on time and an off time of the fryer pots according to a use schedule. The use schedule levels or equalizes the on time use among all of the fryer pots. The controller includes a processor that executes instructions stored in a memory to control the on time use and off time use of the fryer pots as well as the use of filtration based on an elapse of a predetermined number of cook cycles of a stopped fryer pot since the oil was last filtered.
