    Abstract: A dough proofing chamber is described. The chamber is rectangular in cross section having a hollow base with an inlet into the interior of the chamber therein and a ceiling having an outlet with a duct placing the outlet in communication with the interior of the base. An evaporator and heater are disposed within the base adjacent the outlet and a circulating fan draws air from within the chamber through the outlet and duct and blows the air across the heater and evaporator and into the inlet into the interior. In order to insure uniform temperature and humidity conditions throughout the chamber, a diverter plate is disposed spaced above and covering the inlet. The diverter plate slopes from the front to the rear so that opposed nozzles are formed on either side which admit a greater flow toward the rear of the chamber of heated water vapor. A diverter plate is also disposed covering and spaced below the outlet in the ceiling. This diverter plate, however, is parallel to the ceiling.

    Abstract: An infra-red oven for cooking food at low wattage and with infra-red radiation having a wavelength of 3-6 micron is disclosed. The oven includes a rotatable turntable with a lower infra-red emitter disposed below the turntable and an upper infra-red emitter disposed above the turntable in a vertically moveable shroud. Opposed side emitters are deposed on either side of the turntable to cook the sides of the food. To utilize the oven the shroud is raised and food is placed on the turntable. The shroud is then lowered until the upper emitter is about 1.5 inches above the food and the turntable is rotated. Rotation continues as radiation is directed on to the lower and upper surfaces and the sides until the food is cooked.

    Abstract: A forced air circulation heating apparatus in which an air stream is heated at a first location in a conduit means and transported to a second location within the apparatus by the conduit means and is forced into a heating compartment and mixed with a recirculated forced air flow within the compartment. A valve or controller means can be used to vary the proportions of the heated air stream and the recirculated forced air flow which are combined within the heating compartment. The air conduit and the heating compartment can have a common wall whereby the heated air stream indirectly heats the heating compartment. A dual flow impeller fan is used to move the heated air stream and to establish the recirculated forced air flow within the heating compartment. The fan operates with a single electric motor. The heating compartment is vented to a flueway.
