    Abstract: Disclosed is a method for cutting pieces having a predefined length, i.e. sticks, out of a mass of cheese. In said method, the mass of cheese is shaped into a wide cheese bar (1, 11) having a predetermined thickness in a continuous process, the cheese bar (1, 11) is fed to a cutting device by means of a belt conveyor (2) at a certain conveying rate, the cheese bar (1, 11) is first cut into parallel longitudinal strips using longitudinal cutting means (5), and the longitudinal strips that lie parallel next to each other on the belt conveyor (2) are cut into pieces using a transverse cutting means (4) comprising a transverse cutting knife (12) which extends across at least part of the cheese bar (1, 11). The transverse cutting knife, the movement of which is adjustable, is conveyed along with the cheese bar (1, 11) at the conveying rate during the transverse cutting process.
