    Abstract: The present teaching relates to a method for forming rings from dough or other masses. A mass portion is positioned into a forming device on an abutment under a pressing device, wherein the pressing device has a centering ring, a displacement rod, a cut-out ring and a press ram. The centering ring is placed on the abutment, wherein the mass portion is laterally enclosed by means of the centering ring and is pressed by means of the press ram against the abutment into an approximately cylindrical form with a uniform thickness. A core hole is made in the mass portion by means of the displacement rod, so that a thin core of the mass portion remains between the abutment and the displacement rod. The core is punched out by the cut-out ring, and the press ram is lifted off the mass portion formed into a ring.

At least two weighing cells are arranged at a distance to each other with respect to the width of the strip. The weight of at least one dough strand or dough piece having a width defined by the distances of the weighing cells is sensed. The mass of the partial pieces of the strip is determined on the basis of the distance of the weighing cells to each other, the position of the weighing cells along the width of the strip, the strip speed, and the measured values of the weight of the partial pieces sensed by the weighing cells, in particular over a defined time period.

    Abstract: A device for longitudinal cutting and/or stamping of dough strips, wherein the tool-receiving shaft thereof is mounted rotatably with both of its ends in bearing cheeks arranged vertically displaceably in recesses of side panels of the device. The bearing cheeks are vertically adjustable by means of an adjustment screw drive that is arranged in each case on the two anchoring boxes of the clamping lever and that adjusts the cutting depth.     Abstract: The invention relates to a device for the continuous production of a strip (6) of dough from a mass (5) of dough, the width of said strip being a multiple of its thickness. The inventive device comprises at least one pair of opposite, interspaced, longitudinal guiding elements (8, 9) for guiding the dough. The dough passes through the gap (15) formed between the guiding elements and is guided by said guiding elements (8, 9), which are driven in opposing rotatory directions, from an intake end (16) of the device to an outlet end (17) of the same. At least one of the guiding elements (8, 9) is profiled on its circumference with a plurality of grooves (20) extending side by side, perpendicularly to the longitudinal direction of the respective guiding element (8, 9). Said grooves (20) assist the transport of the dough through the gap (15) and enable the bubbles in the dough (5) to be maintained.

    Abstract: Apparatus for forming a dough strand from a preferably large-volume dough mixture (28) has a receptacle (2) for holding this dough mixture, which is provided at the bottom with a discharge opening (4) for the dough. Connected to this discharge opening are two shafts (6) arranged so as to be parallel to one another and driven in opposite directions in order to effect a downward movement of the dough. The shafts (6) are provided with profiles acting on the dough which are formed by star arms (5). The shafts (6) are arranged so as to be fixed and are driven in a timed manner for the rotary movement. The star arms (5), of which there is an even number for each shaft (6), in the position directed towards one another block the downward flow of dough therethrough over the major part of the axial length of the shaft (6).
