Abstract: Apparatus for producing shrimp-shaped food products and a food product produced by the apparatus. The apparatus includes a split mold having a cavity shaped as a shelled-shrimp-shaped product. The mold has an injection opening for injecting a minced fish material into the cavity, the injection opening extending from the root or base of the shrimp's head to the shrimp's back portion and being oriented upwardly. After injecting the minced fish meat into the cavity, a V-shaped device is lowered towards the opening of the mold to make a longitudinal groove in the minced fish material. The mold and the material are heated up to produce a shrimp-shaped food product. The apparatus may further include a cover mold having a supply channel formed in it for moving the material to the injection opening. The V-shaped device may be incorporated in the cover mold.

Abstract: This disclosure relates to apparatus and method for the production of fish-paste food products having the appearance of shelled shrimp, crab claws, lobster, abalone, etc. The apparatus comprises a two-piece mold with a mold cavity conforming to the shape of the product, means for spraying a coloring agent into the cavity, filling means for pressing a paste of ground fish meat into the mold cavity, a heating unit for heating and solidifying the fish paste, and means for removing the heated and solidified fish-paste food products from the mold. The invention further comprises the method of providing a split mold having a cavity generally conforming to the shape of a shellfish, spraying the inside wall of the cavity with an aqueous food coloring, filling the cavity with a meat paste under pressure, heating the mold and the paste to a sufficient temperature to cook and color the meat paste, and removing the product from the mold.

Abstract: This disclosure relates to a food processing machine for processing a sheet of gelatinous food material into a fibrous product. The machine includes a knife roller having a plurality of parallel annular disk-like blades, a counter roller having a cylindrical outer surface, and a nozzle for jetting a stream of a fluid from the sheet feeding side of the rollers. The jet of fluid flows between the annular blades of the rotating knife roller and prevents the food material from sticking to the blades.

Abstract: A method for coloring minced fish meat products wherein a paste-like dye is applied to the edge of an injection opening of a split mold, the mold having a cavity in the form of a cooked-and-peeled meat of a crustacean such as shrimp or crab. Minced meat of fish or the like is later injected into the cavity through the opening, the dye being moved along the inner surface of the cavity along with and due to the movement of the injected material, and the dye is applied to the inner surface of the cavity and to the surface of the injected minced meat material. The apparatus for coloring the minced fish meat products is comprised of a mold having a cavity for shaping a food product and an injection opening for injecting minced fish meat material into the cavity. A food color injection device is provided comprising a pair of nozzles located close to the opening of the mold, the nozzles being capable of free insertion into and retraction from the opening.

Abstract: A food product mold apparatus for producing a food product, for example resembling the shelled meat of shellfish, including two elongated mold halves which when fitted together form a series of multiple food product mold cavities. Devices are provided for holding together the two ends of the mold halves. The mold halves include reinforcement ribs located at intervals along the outer sides of the mold halves, and a rod is mounted lengthwise along the backside of each mold half in such a manner that the reinforcement ribs are in contact with the steel rod. The ends of the rods are secured to the ends of the mold halves and the rods are held under tension and press against the center areas of the mold halves.

Abstract: A process and apparatus are disclosed for making an elongated food product. An elongated length of solidified food product is placed on and conveyed by an endless flat belt and fed into a tube after the belt is shaped into a cyclinder and encloses the food product. The elongated food product is then heated by a microwave oven while it is in the tube.
