Abstract: The present disclosure relates to a microbiome composition for improving muscle strength using a heat-treated fermented culture complex of KM2 Lactiplantibacillus plantarum, wherein the composition according to the present disclosure increased synthesis of myoproteins and showed an effect of inhibiting degradation of myoproteins and animal tests showed an effect of improving muscle strength and increasing leg muscle mass through the increase in grip strength, travel distance, and speed, as well as results in which hamstring muscle strength is improved and muscle mass increases even in a clinical trial. In addition, it was found that the beneficial bacteria increased through an increase in the diversity of intestinal microflora that changed with muscle reduction and improvement in the microflora composition, while the harmful bacteria decreased.
Abstract: The present invention relates to a novel halophilic Bacillus amyloliquefaciens KMUS1 strain (KCTC13635BP) producing thrombolytic enzyme nattokinase, and the halophilic Bacillus amyloliquefaciens KMUS1 strain according to the present invention produces highly active nattokinase. When food is fermented using the above strain, it can also be used in foods with high salt concentration. In addition, it can be used in the food industry through the role of dissolving and preventing blood clots by nattokinase produced by the strain.

Abstract: The present invention relates to a halophilic Bacillus polyfermenticus KMU01 strain producing salt-tolerant gamma-glutamyl transpeptidase, and the halophilic Bacillus polyfermenticus KMU01 strain according to the present invention (KCTC11751BP) producing a halophilic gamma-glutamyl transpeptidase, wherein, when food is fermented using the strain of the present invention, it can be utilized in foods with high salt concentration, and fermented foods having excellent flavor and various peptides can be prepared by high enzyme activity that decomposes protein binding.
Abstract: The present invention relates to a composition containing bioconverted black soybean powder of which various biologically active functions are improved by treating whole soy milk with an enzyme solution derived from Bacillus polyfermenticus strain. The present invention has identified that low-molecular-weight functional amino acids and peptides are formed by treating whole soy milk with a fermentation solution in which various peptide synthetases and lyases derived from a Bacillus polyfermenticus strain are mixed, and that bioconverted black soybean powder has functional effects such as antioxidant activity and behavioral disorder improvement, and thus a composition for alleviating behavioral disorders, containing bioconverted black soybean powder as an active ingredient, is provided.
Abstract: The present invention relates to a Lactiplantibacillus plantarum KM2 strain isolated from aged meat, and a use thereof, wherein the strain has proteolytic activity, immunity-enhancing activity, and probiotic properties, wherein it was found that the Lactiplantibacillus plantarum KM2 strain exhibits proteolytic activity and an immunity-enhancing effect, and does not exhibit hemolytic activity or have genes related to harmful substances or harmful enzymes. Thus, the Lactiplantibacillus plantarum KM2 strain can be used as a material for various probiotics, functional food compositions, and pharmaceutical compositions.
Abstract: The present invention relates to a method for preparing bioconversion powder having various improved physiological activity functions, by treatment with an enzyme solution derived from a Bacillus polyfermenticus strain, and provides a method for preparing bioconversion powder using a fermentation broth of a Bacillus polyfermenticus strain, by confirming that low-molecular-weight amino acids, peptides and various functional ingredients were formed by treating whole soy milk with a fermentation broth mixed with various degrading enzymes and peptide-synthesizing enzymes derived from the Bacillus polyfermenticus strain.
