    Abstract: Various packages for food products are provided herein. In one embodiment, a food package comprises a rectangular substantially planar rigid bottom wall; two slanted side/side walls extending angularly upwardly from the bottom wall, each forming an angle of from about 55 to about 75 degrees from vertical axes extending orthogonally from a plane formed by the bottom wall; and a rectangular opening opposite the bottom wall, the opening larger in area than the rectangular rigid bottom wall. A top side wall and a bottom side wall extend upwardly from the bottom wall; and a flexible film extends over the opening and seals the opening. The side walls are configured to engage and hold the food product, each side wall being angularly ramped and extending downward and inward toward the bottom wall, and having at least one well which extends downwardly from the angularly upward extending side wall.

    Abstract: A method apparatus for removing a casing, particularly a casing with a clip end embedded in the product, is disclosed where the clipped end is clamped and gas is injected into this end to blow out the clip and casing end while the clamped portion prevents the entire casing from being inflated. The air or gas, such as HEPA filtered air, is injected into the product with a needle, for instance, to balloon out the casing in the clamped area to free the previously embedded clip. The clip is then gripped, certain cuts are made in the casing, and the casing is pulled from the product. An injector such as a needle is inserted into the end portion of the product and pressurized gas, such as HEPA filtered air, is injected into the end portion. The injection of the gas causes the casing to balloon out from the product thereby freeing the previously embedded clip. The freed clip is then gripped while the casing is then cut for removal.

    Abstract: Thin snack chips having a curved or wave shape are obtained by forming, shaping or curling baked chips into a curved or wave configuration before they become too cold and rigid so as to result in breakage during forming. The essentially flat, malleable baked chips, still hot from baking in an oven may be continuously transported on a conveyer belt into a nip or gap formed between the conveyer belt and a rotating forming roller to curve or curl the malleable baked chips around the roller. The malleable baked chips are subjected to a guided curtain of air to cool and set the chips in a curved or wave configuration and to remove or blow the curved or wave chips off of the rotating forming roller onto the conveyor belt.

The general method comprises preparing an aqueous extract, contacting the aqueous extract with an adsorbent, removing the adsorbent to obtain a glucosinolate-containing extract, drying the glucosinolate-containing extract to obtain a dried glucosinolate-containing extract, mixing at least a portion of the dried glucosinolate-containing extract with a solvent to form a glucosinolate-containing suspension, clarifying the glucosinolate-containing suspension, contacting the glucosinolate-containing suspension with a catalyst, and introducing hydrogen for a time sufficient to obtain a chemoprotectant precursor-enriched extract.

The first panel section defines an access opening through the first film layer when it is separated along the first tear line during an initial separation of the first and second film layers. The second panel section also becomes separated from the first film layer when the second film layer is separated from the first film layer to provide an indication of an initial opening of the closure. Subsequently, the second film layer may be re-adhered to the first film layer to reseal the access opening, while the second panel section remains separated from the first film layer.

The sealing cover, adhesive and top surface are optimized to provide sealing characteristics of sufficiently resealing frequency, relatively low noise level during unsealing and desirable peel forces to separate the seal between the sealing cover and the top.

    Abstract: Process for manufacturing cheeses and other dairy products, and the resulting products, in which lactobionic acid is added, or generated in situ, in combination with a dairy component in the course of the process. The lactobionic acid can be used as the sole acidulent for direct acidification of the cheese, or in conjunction with reduced amounts of lactic acid culture. When the lactobionic acid is generated in situ during cheese manufacture according to the invention, a lactose oxidase is used in one embodiment to convert lactose intrinsically present in the dairy liquid ingredient(s) into lactobionic acid. The organoleptic attributes of the cheeses made using lactobionic acid as an ingredient are satisfactory and fully suitable. The process can be applied to the production of a wide variety of cheeses, including, for example, cream cheeses, hard cheeses such as cheddar, UF cheeses, process cheeses, cheddar cheeses, and so forth.
