    Abstract: Novel microorganisms, which can be obtained by the following selection method: (a) microorganisms which grow using N-acetylglucosamine as the sole carbon source are cultivated in a customary manner, (b) from the resulting culture, these microorganisms are then selected which are stable and have the property to metabolize N-acetylglucosamine rapidly in the presence of N-Acetylmannosamine. Furthermore, a novel process for preparing NAM starting from a mixture of NAM and NAG.
