    Abstract: An integral, detachable, promotional coupon is formed, at least in part, by a hinged tuck flap extending from an inner major end-closure flap of a carton. The coupon may be confined to the hinged tuck flap or it may extend onto a portion of the inner major flap. The hinged tuck flap may be folded down into the carton in a vertical position, perpendicular to the inner major flap or it may be folded back upon the inner major flap in a horizontal position between the inner and outer major flaps. The top major flap may be glued to the inner major flap without affecting the detachable coupon.

    Abstract: An extrusion processed cookie is produced having shear sensitive particulates and/or heat sensitive additions uniformly dispersed therein. A dry flour blend, including flour, dry milk solids and salt is added to a blending zone of a cooker-extruder with a fat or shortening. The mixture is blended and heat-treated in a heating zone of the extruder under high temperatures without fat separation to form a heat-treated mass. The heat-treated mass is cooled in a cooling zone followed by the addition of a sugar, heat sensitive and/or shear sensitive ingredient to form a cookie composition. Water is also introduced to the cooling zone in an amount effective to produce a dough-like consistency. The heat-treated cookie composition is extruded and shaped into an unleavened and unexpanded cookie dough piece. The cookie pieces are then leavened by heating in a convection, microwave or radio frequency oven to produce a leavened cookie having a crumb-like structure.

    Abstract: Low sodium baked goods, such as soda crackers, oyster crackers, pretzels, and flavored snack crackers, having a substantially uniform texture and pH throughout, a substantially uniform surface color, a pleasant mouth feel and taste are obtained by the process of the present invention. The sodium content of the baked goods is reduced, for example, to less than or equal to 42 mg Na.sup.+ per 14.2 gm serving, by replacing at least a part, preferably all, of the sodium bicarbonate with potassium carbonate for leavening. Hot spots resulting from localized concentrations of potassium ion are avoided by: 1) applying the potassium carbonate substantially uniformly and directly upon the surface of the other ingredients to hydrate and solubilize the potassium carbonate and/or 2) using potassium carbonate having a particle size distribution of about 98% by weight being finer than 100 mesh or 3) using an aqueous solution of potassium carbonate.

The control assembly includes a roller subassembly, a first roller rotatably supported by the roller support assembly, and a second roller rotatably supported by the roller support assembly and located adjacent the first roller. The first and second rollers form a feed gap therebetween to receive the food material, and the second roller is also supported for movement toward and away from the first roller. The control assembly further includes an adjusting subassembly connected to the roller support subassembly to move the second roller toward and away from the first roller to vary the size of the feed gap, and a roller drive subassembly connected to the first and second rollers to rotate those rollers to pull the food material through the feed gap and to direct the food material to the die plate.

The surface-modified adsorbent is prepared by (a) treating an adsorbent with a sterol compound so that the sterol compound becomes adsorbed on the adsorbent surface; (b) treating the sterol-modified adsorbent with a surface-modifying agent, this surface-modifying agent having a reactive group capable of reacting with the surface of the adsorbent, and an elongate hydrophobic portion, so that the surface of the adsorbent not covered by the adsorbed sterol compound reacts with the surface-modifying agent; and (c) desorbing the sterol compound from the adsorbent.

    Abstract: Novel fat mimetic compositions are disclosed to be useful in reduced calorie foods. These compounds, which can be referred to as linked esters, consist of linked multi-ester or mult-ester/ether fragments joined by a polycarboxylate. These complex linked esters may be partially broken down in the body to produce digestion residues which are substantially nondigestible themselves and are sufficiently hydrophilic to enable the digestion residues to be incorporated in the normal stool. These fat mimetic compounds are useful as replacements for fats and oils for most food applications.

The adhesive solution employed in the initial coating step preferably comprises a mixture of honey, corn syrup, sucrose, carbohydrate gum and water. The final coating is tightly adherent after roasting.A method of operating the process on a continuous basis is also described.

    Abstract: In accordance with the present invention a process and apparatus for removing contaminates from edible cooking oil is provided. A continuous stream of cooking oil at an elevated temperature is withdrawn from a cooking bath. A continuous stream of liquid solvent for at least a portion of the contaminates is mixed with the oil. The solvent has a specific gravity different than the specific gravity of the oil. As the oil and solvent streams are mixed, at least a portion of the contaminates are transferred from the oil to the solvent. The oil and solvent mixture is then separated by specific gravity into a stream comprising cleaned oil and a stream comprising solvent and contaminates. The cleaned oil stream is then returned to the bath, preferably being heated in a heat exchanger prior to introduction in the bath.

    Abstract: A support assembly for a rotatable punch drive plate in a rotary press having a die plate forming a multitude of die cavities and supported for rotation about a given axis, and a multitude of punches supported for axial reciprocating movement in the die cavities. The punch drive plate engages the punches, and rotation of the die plate and the drive plate reciprocates the punches to force a food material into the die cavities, to mold the food material therein into tablets and then to eject the tablets from the die cavities. The support assembly includes a multitude of support subassemblies spaced around and engaging the punch drive plate. These support subassemblies preferably both support the drive plate for rotation about the given axis and axially flex the drive plate toward and away from the die plate as the drive plate rotates about the given axis.
