Abstract: The present invention relates to a method for roasting coffee beans comprising the steps of a) heating the coffee beans by a heating rate between 20° C./minute and 40° C./minute until the temperature of the coffee beans is between 160° C. and 220° C., and b) heating the coffee beans by a heating rate between 1° C./min and 10° C./minute, said heating steps being performed in the same roasting chamber.

Abstract: A composition comprising protein hydrolysates derived from milk is obtained by the treatment of enzymes derived from microorganisms. A trypsin-like enzyme and a chemotrypsin-like enzyme are used. The composition is in particular intended for inducing tolerance in infants with the effect of modulating the potential occurrence of allergies later in life. The composition can also be used in sick adult patients. Preferably the composition is an infant formula, infant follow-up formula, growing-up milk or baby food or an enteral complete nutritional composition.

Abstract: A dehydrated acidified milk product is made by preparing an aqueous composition containing milk protein and having a dry matter content of from 10% to 40% by weight. The aqueous composition is inoculated with a strain of L. helveticus which exclusively forms lactic acid L(+) and a strain of S. thermophilus and fermented to obtain a fermented composition having a pH of from 4 to 5. The fermented composition is dried to obtain the dehydrated acidified product.
