Abstract: A process for making a deodorized edible oil or fat having a low level of bound MCPD (monochloro propanediol esters) and/or low level of bound 3-MCPD is described. The process comprises a step of contacting the oil or fat to a carboxymethyl cellulose or an ion exchange resin. The carboxymethyl cellulose can be a Blanose® cellulose gum and the resin can be a cationic resin. A deodorized vegetable oil or fat and a food product made there from is described. The food product can be an infant formula. It exhibits low levels of bound MCPD and/or low level of bound 3-MCPD. In one embodiment the oil or fat has a reduced level of free fatty acid as well as a limpid aspect and no off-flavors.

Abstract: Creamers for whitening food products are provided. The creamers can be shelf-stable and aseptic. The creamers can have high whitening capacity and a pleasant mouthfeel. In a general embodiment, the present disclosure provides a creamer including a hydrocolloid, an insoluble divalent salt, a protein, an emulsifier, and an oil. The creamer does not need to include titanium dioxide to provide a whitening effect. The creamer can be a fat-free, liquid creamer including water ranging from about 50% to about 90% by weight.

Abstract: The present invention provides a probiotic, Lactobacillus paracasei NCC 2461, i.e. ST11, for use by administration to expectant females and/or lactating mothers, and to their progeny for the reduction or prevention of the development of allergic immune responses in progeny. A daily dose of ST11 is administered to a pregnant woman for at least two weeks before delivery and, after delivery, the daily dose of ST11, is administered to the lactating mother or the newborn infant for at least two months, either directly or via the mother's milk. The infant immune responses to allergens are thus reduced, resulting in a “dampened” allergic response. Thus allergy, including atopy, may be prevented in the progeny.
