  • Patent number: 5827560
Abstract: A continuous process for producing a tea extract which contains solubilized tannins and which has good color. Tea solids are extracted from tea leaves using an extraction liquid to provide a tea extract containing soluble tea solids and insoluble tannins. The insoluble tannins are separated from the tea extract and oxidized and solubilized under raised temperature conditions to provide a solubilized tannin liquor. The solubilized tannin liquor is either returned to the extraction liquid during extraction of tea solids or added to the tea extract after separation of the insoluble tannins. The tea extract which contains solubilized tea tannins is collected.

  • Patent number: 5824266
Abstract: An apparatus for treating a fluid product by injecting steam from a steam inlet and fluid product from a product inlet into a mixing chamber. The mixing chamber includes an outlet for the treated product, a steam injection opening with a first valve member disposed therein and a product injection opening with a second valve member disposed therein. The position of the first and second valve members determines the width of a substantially annular discharge orifice around each valve member. The discharge orifices face one another. The apparatus additionally includes pressure sensitive displacement means which permits movement of the second valve member in response to the pressure in the product inlet. • Patent number: 5810188
Abstract: A hinged closure has a ring member, a lid member, a first hinge which connects the ring and lid members, and a locking tab member, hinge and protrusion member assembly. The first hinge connects the lid and ring so that the lid reciprocates for closure and opening and upon closure, edges of a lid skirt and ring skirt mate. The lid has a wall surface which has a recess portion which extends from the lid skirt at a position which opposes the first hinge, and an indent is positioned in the recess portion. The locking tab member is hinged to the ring and extends from the ring and the protrusion member extends from the tab so that upon lid and ring closure, the tab extends to the lid recess and so that the protrusion removably connects to the indent portion to hold the lid and ring member together.

  • Patent number: 5800850
Abstract: Spoilage of heat-sterilized liquid food products is reduced by preparing the liquid food product, prior to sterilization, by mixing an enzymatically-modified phospholipid composition, particularly an enzymatically-modified phospholipid composition having a degree of conversion of greater than 90%, with the liquid food product. Liquid food products which may be so treated include, in particular, coffee, tea, or cocoa beverage-component solids which provide beverage products. Additionally, an enzymatically hydrolyzed phospholipid composition having a degree of conversion greater than 90% may be obtained by hydrolyzing phospholipids in an aqueous medium, wherein the amount of water is greater than one part per part phospholipids, under agitated conditions so that a degree of conversion greater than 90% is obtained.

  • Patent number: 5798131
Abstract: An article of ice confectionery is coated with a liquid fatty composition, and the fatty-coated article then is coated with dry friable particulate material, particularly cereal flakes and in particular, rice flakes, and non-adhering particulate material is recycled for subsequent application to and coating of further articles. Intact, non-adhering particulate material is recycled with a vibrating screw elevator. In an embodiment, the particulate material coating step is accompanied by cooling of the fatty-coated article so that the particulate material is applied prior to solidification of the fatty coating at its surface. In another embodiment, the particulate-coated article is coated with a liquid fatty material.

  • Patent number: 5792504
Abstract: A process for the production of a formulated emulsion product which has a meat-like appearance. A protein source is emulsified and then alkali is added to the emulsion to raise the pH to above 8. The emulsion is rapidly treated in an emulsion mill to causes the protein in the heated emulsion to at least partially coagulate. The heated emulsion is then allowed to coagulate and form striations and is cut into chunks. The formulated emulsion product so produced contains about 45% to 85% by weight moisture and has a chewy texture and a high striated appearance.
