Abstract: A rapid cook finish broiler with programmable, movable heat shields that open at the beginning of a cook cycle and close after a set period of time blocking much of the heat from heating elements from reaching food disposed below, enabling users to keep the heat source at a high setting, and having shelves with adjustable heights and a blower system that provides air flow to distribute and direct hot air onto food product to reduce cooking times.
Abstract: A cooking system, including a product loader for dispensing uncooked food product; a broiler/oven having an inlet end, a cooking chamber, a discharge end, a motorized conveyor system for conveying food through said broiler from said inlet end to said discharge end, and heating elements for heating and cooking food products in said cooking chamber. Disposed at the input end between product feed belts and broiler conveyor belts is a photoelectric sensor system that detects the presence of food product passing from the feed belts to the broiler conveyor belts which, when tripped, locks in the cook time for a recipe under execution and prevents inadvertent user changes that would adversely affect the cooked product quality.
Abstract: A gas burner and air supply system, including at least one elongate gas burner element connected to a fuel supply and a primary air supply. Arrays of fuel/air outlets disposed on opposing sides of the gas burner element output fuel and air for combustion and to form a cooking flame. An air plenum with a low pressure air supply is disposed above the each gas burner element and has an inverted V-shaped trough disposed immediately above the gas burner. First and second low pressure inboard air outlet arrays in the trough provide a secondary air supply to the combustion process. The plenum also includes at least one outboard array of low pressure air outlets disposed above and to an outboard side of each of gas burner to create a tertiary air supply, which creates a downward curtain of pressurized air that guides and directs heat from the flames downwardly.
