    Abstract: A composition of yeast extract from genus Candida is provided. In the said composition, contents of mannitol, glutamic acid, alanine, 5′-IMP and 5′-GMP are above 0.5%, above 2.0%, above 0.5%, above 1.5% and above 1.5%, respectively, all of which should simultaneously be satisfied the condition. Increased contents of alanine and 5′-IG of the extract of Candida yeast resulted to obtain yeast extract having sea tangle (kombu) (Laminariales, kelps)-like taste and flavor.
