Abstract: A material comprising a highly branched carbohydrate polymer, a polyalkylene glycol (or polyalkylene oxide) linked to the highly branched carbohydrate polymer, and a hydrophobic or amphiphilic group linked to the highly branched carbohydrate polymer and/or the polyalkylene glycol (or polyalkylene oxide), is described. Methods of making and using the material, as well as a soluble composition that contains the material and a hydrophobic solute compound, are also described.

Abstract: The present invention provides methods for treating phytoglycogen-containing materials to generate phytoglycogen compositions with enhanced emulsification attribute. One method comprises contacting a phytoglycogen-containing material with at least one protease. The other method comprises heat treatment of a phytoglycogen-containing material, such as corn kernels. The two methods can be applied independently, or can be applied in combination. Applications of phytoglycogen compositions are also included.
