Abstract: A method for the fractionation of fatty acids with a difference of two carbons by molecular distillation with double pass fractionation between eicosapentaenoic and docosahexaenoic acids, and compositions of microorganism oils enriched in eicosapentaenoic or docosahexaenoic acid. The method wherein (i) a reaction step between an microorganism oil including omega-3 polyunsaturated fatty acids in triglyceride form and an alcohol in the presence of a chemical or enzymatic catalyst, (ii) a first step of molecular distillation under high vacuum of the oil from step (i), in a scraper film evaporator coupled to a rectification column including at least seven theoretical plates, and recovery of a first residue and distillate, (iii) a second step of molecular distillation under high vacuum of the step (ii) residue, in the scraper film evaporator, and recovery of a second residue and distillate.

Abstract: A composition comprising a mixture of DHA and/or EPA in the form of glyceride or ethylester derived from at least one microorganism, such as a microalga, and at least one plant-derived phospholipid, in which the content of DHA and/or EPA in triglyceride form is between 10% and 90% by weight relative to the total weight of the composition, and the content of at least one plant-derived phospholipid, such as phosphatidylcholine, is between 10% and 90% by weight relative to the weight of composition. The method for manufacturing same and to the use thereof, in particular in the treatment of pathologies involving a deficiency of DHA and/or EPA, such as age-related macular degeneration or Alzheimer's disease.

A microorganism oil composition includes an eicosapentaenoic acid and/or docosahexaenoic acid content greater than or equal to 500 mg/g of composition, and, with respect to the total quantity of glycerides, a quantity of diglycerides greater than 45% and a quantity of monoglycerides and diglycerides greater than 60%.

Abstract: A microorganism oil composition, in particular of microalgae, enriched with polyunsaturated fatty acids, characterised in that it has a saturated fatty acid content of less than or equal to 40 mg/g of composition, an omega-3 polyunsaturated fatty acid content greater than or equal to 500 mg/g of composition, and in that it includes, with respect to the total quantity of monoglycerides, diglycerides, triglycerides and fatty acid ethyl esters, a quantity of triglycerides below 70%, a quantity of diglycerides of between 10 and 35%, and a quantity of monoglycerides of between 1 and 5%.
