    Abstract: An automated food processing system and method is provided that allows food to be dispensed, fried and packaged in a suitable container, which may be an individual portion-sized container. In one embodiment, the system includes separate automated modules for dispensing, frying and packaging the food. In one embodiment, an automated dispensing device dispenser a predetermined portion of food from a bulk storage container or food dispensing magazine. Food is dispensed from the automated dispensing device to an automated fry device that can include at least one circular fry wheel having a plurality of food containing compartments. After the food is fried it is dispensed from the fry device to an automated packaging device. The automated packaging device dispenses food to a container that may be an individual portion-sized container that is retrieved, erected and held into position for filling by an automated container handling system.

A device is provided for determining the number of food pieces in the container located in the secondary container and for dumping the secondary container so that food pieces contained in the secondary container are dumped to a location outside of the freezer.

    Abstract: This patent document describes various valve assemblies comprising a valve member movable between an outlet flow-blocking and an outlet flow-passing position. A portion of a valve member first end is covered by a pilot, while a valve member second end is operatively associated with a solenoid mechanism. In an example, the solenoid mechanism is configured to initially move the valve member from the outlet flow-blocking to a bleed position, and subsequently move the valve member from the bleed position to the outlet flow-passing position. The pilot covers the valve member such that a solenoid mechanism force needed to move the valve member from the outlet flow-blocking position is reduced. For instance, the pilot reduces a surface area of the valve member subject to a housing outlet pressure.

    Abstract: A method is provided for storing a cooked food in a flexible-walled container having an opening. The method includes placing a quantity of food in a flexible-walled container and submerging at least a portion of the container in a liquid with the opening being located so that liquid does not enter the opening. At least the lower portion of the container is maintained in the liquid and the food is maintained in the container below the surface of the liquid. The liquid collapses the container to seal the container. The temperature of the liquid may be maintained at a non-ambient temperature to heat or cool the food as it is stored. The method may also include storing the food adjacent a work surface, or at a remote main vat and transporting the rack to the work surface at which a serving that includes the food is prepared.

    Abstract: An apparatus and method for changing a spatula blade is provided. The apparatus has a restraining element for engaging the blade to restrain the blade on a blade support surface. A restraining member is movable from a first position spaced from the blade support surface, and a second position for limiting movement of the blade while restrained by the restraining element at the blade support surface. To remove a blade from a spatula body, the restraining member is moved to the second position. In the second position, movement of the blade is limited to prevent disengagement from the restraining element. A force is applied to the spatula body to separate the body from the blade. To install a blade to a spatula body, the blade is restrained by the restraining element and the restraining member and the spatula body is advanced toward the blade to mount the blade to the body.

The cooked food staging device allows previously cooked food items, particularly sandwich fillings such as hamburger patties, fish fillets, biscuits, Canadian bacon, pork sausage, eggs, chicken patties, chicken fillets and nuggets, to be stored over extended periods of time at an elevated temperature without significant deleterious effects to the appearance, taste and texture of the food while avoiding risk of bacterial contamination. The food staging device is composed of a plurality of discrete compartments bounded by upper and lower heated compartment surfaces. Food can be stored within the compartments in trays having sidewalls of a height such that a gap is achieved between the top of the tray and the upper compartment heated surface to limit and control the evaporation of liquid from the food stored therein.
