This cooling jacket includes plurality of substantially parallel coolant channels formed from the material of the jacket, wherein each of the plurality of channels further includes a least one vertical portion and at least one horizontal portion, and wherein each horizontal portion further includes a plurality of parallel ridges and parallel valleys formed therein and running lengthwise therethrough.

Abstract: An agitator assembly for use with mixers is provided. This agitator assembly includes an agitator shaft adapted to receive a flow of liquid coolant therethrough; a first hub assembly mounted on the agitator shaft; a second hub assembly mounted on the agitator shaft; at least one agitator bar connecting the first hub extension to the second hub extension, wherein the agitator bar further includes a conduit for delivering liquid coolant from the first hub extension to the second hub extension; and at least one agitator bar connecting the second hub extension to the first hub extension, wherein the agitator bar further includes a conduit for returning liquid coolant from the second hub extension to the first hub extension.

Abstract: A lifting mechanism for moving a trough from a lowered position to an elevated having a pair of guide tracks operably coupled to a trough cradle by a pair of roller mechanisms. A lifting arm operably couples the trough cradle to a drive mechanism. As the trough cradle is elevated, the roller mechanisms move away from the drive mechanism and the trough cradle to rotate about a transverse axis.

Abstract: A dough transfer hopper and method for partitioning dough pieces having a precise volume from a dough mass is disclosed. The dough transfer hopper includes a hopper assembly having a pair of inwardly angled end walls and a pair of arcuate side walls defining an upper and lower opening. A cutting assembly is operatively disposed within the lower opening and includes a pair of cutters which operate in a counter-rotating manner to partition a dough piece having a precise volume from a dough mass and deposit the dough piece on a horizontal conveyor assembly. The horizontal conveyor transports the dough piece to an inclined conveyor assembly. The inclined conveyor assembly includes a pair of counter-rotating conveyor belts for transporting the dough piece from the horizontal conveyor to a transfer conveyor assembly for further processing.
