Each heat transfer plate is provided with an inlet and an outlet for the flow of the heating fluid through the plates. A purge fluid delivery system provides a flow of purge fluid, such as air, gas or steam between the plates in a direction across the direction of flow of the material to be dried. The purge fluid delivery system provides a flow path for the purge fluid which is isolated from the flow of the heating fluid through the plates.
