Abstract: The invention relates to an apparatus for cooling high-heat-treated food products with a flash-cooler, having a container for a pre-product to be cooled with an inlet for the pre-product to be cooled and an outlet for the cooled end product of the food product as well as cooling equipment, the cooling equipment having a cooling jacket associated to the container, through which at least one part of the wall of the container is cooled. The invention also relates to a heat-treatment line for food products, having one such apparatus. The invention also relates to a method for cooling high-heat-treated, particularly ultra-high-heat-treated food products, using a flash cooler having a container for a pre-product to be cooled, with an inlet for the pre-product to be cooled and an outlet for the cooled end product of the food product and cooling equipment.
Abstract: The invention provides a device (1) for processing and treating chocolate, with a container (2) and stirring means (3) arranged therein, wherein the container (2) has a processing interior (2a) with a cylindrical wall (4) and an outwardly curved bottom (5) and is set up obliquely, i.e., the center axis (ZA) of the cylindrical wall (4) is inclined with respect to the vertical, and wherein the stirring means (3) comprises at least one stirring arm (7), which is rotatable about this center axis (ZA), while projecting from the center axis (ZA) of the cylindrical container (4) at least also in the radial direction, and a conching tool (6), which is rotatably arranged at or near the bottom (5) or the lowest vertical point of the container (2) about a an axis of rotation (DA), and wherein the conching tool (6) rotates faster than the stirring arm (7) during operation.
Abstract: A method, device, and knife system for producing purëed, cooked foodstuffs from piece-form raw material. The method includes pre-chopping of the piece-form raw material in a pre-chopping unit, cooking of the pre-chopped raw material in a cooking plant, and final processing of the cooked product in a final-processing unit. Before cooking, the piece-form raw material is cut into small pieces by the pre-chopping unit such that a pumpable mass is produced from the piece-form raw material.

Abstract: The Invention relates to a steam injection module (1), suitable for a unit for the pasteurization or sterilization of liquid to highly viscous food products. A steam tube (2) passes through a product line section (3), transverse to the longitudinal axis, made homogeneously from a single material by cutting with no welded seams. Within the product line section (3) this steam tube (2) comprises steam outlet openings (7), through which the hot steam at about 150 degrees centigrade is injected into the flowing product. The product line section (3) and this steam cube (2) are each fixed by fixing flanges (8, 8?, 9,9?) in the total line set of the unit.
Abstract: A mixing shaft (1) is disclosed, used in an assembly (2) of a unit for thorough mixing and comminuting of food products. The mixing shaft (1) comprises a steel core (3), surrounded by a one-piece plastic coating (6) with mixing elements (4). In order to retain the plastic coating (6) on the steel core (3) of the mixing shaft (1), the surface of the steel core (3) has a structured embodiment. The plastic coating (6) is applied to the mixing shaft (1) by means of a particular isostatic pressurized application method.
