    Abstract: A loading head for use with food articles has a main conveyor adapted to convey a plurality of food articles, an indexing conveyor positioned beneath the main conveyor, and a transfer member positioned between the main conveyor and the indexing conveyor. The transfer member is adapted to transfer each food article from the main conveyor to the indexing conveyor. A buffering mechanism is adapted to move the transfer member between a first position and a variable second position. A pusher mechanism is associated with the indexing conveyor to raise and lower gates from an open position permitting food article transfer to a closed position prohibiting food article transfer. The pusher mechanism includes a cam operably associated with the gates to open and close the gates.

    Abstract: A by-pass control system for a meat injection system has a variable speed pump that transports fluid to a meat injection machine. Excess fluid is transported to a by-pass control valve. The valve has a moveable piston disposed therein that separates the valve into a fluid chamber and an air chamber. The piston moves back and forth based on the relationship between fluid pressure and air pressure. Sensors are disposed within or through the lid or the valve to sense the position of the piston. A controller is connected to the sensors and the variable speed pump and adjusts the speed of the pump based on the position of the piston.

    Abstract: An extrusion attachment for sausage making machines have three connection concentric tubes with the inner tube defining a first passageway, the space between the inner restrictor and intermediate second tubes comprising a second first passageway, and the space between the outer third tube and the intermediate second tube defining a third second passageway. The diameter of the inner restrictor tube is small so that meat emulsion passing into the inner restrictor tube is subjected to a higher pressure than that of the pressure in the second first passageway. The lower pressure meat material in the second first passageway is thinly coated on the strand of the high pressure meat material extruded from the inner restrictor tube. A thin layer of collagen material is extruded from the third second passageway for deposit on the outer surface of the meat layer extruded from the second first passageway.
