Abstract: The invention provides a composition comprising novel lactic acid bacteria having immunoregulating activities. Specifically, the invention provides food, drinks or medicaments containing novel lactic acid bacteria separated from “Shibazuke,” one kind of traditional Kyoto pickles, and having immunoregulating activities. The lactic acid bacteria belong to Lactobacillus pentosus and have a weak assimilating activity or no assimilating activity for glycerol.

Abstract: A method of roasted coffee beans treatment capable of reducing acidity component of the roasted coffee beans, improving the extraction ratio thereof and drawing out superior flavor originating from coffee and steam treated roasted coffee beans using the method. In the method of roasted coffee beans treatment, a steam treatment is effected on the roasted coffee beans by supplying steam thereto under a flowing condition thereof. More particularly, the roasted coffee beans are accommodated in a bean accommodating portion having a steam supply passage and a steam exhaust passage and the steam treatment is effected by flowing the steam from the steam supply passage to the steam exhaust passage such that the steam is exhausted from the steam exhaust passage at an outlet pressure higher than the atmospheric pressure.

Abstract: A process for producing a carbonyl compound involves allowing water to undergo phase transition to a supercritical or subcritical state in the presence of an alcohol compound so as to produce/generate water-derived hydrogen and at the same time convert the alcohol compound into a corresponding carbonyl compound. Specifically, the process is carried out by introducing the alcohol in a reaction tube along with water and heating and/or pressurizing the mixture of the alcohol and the water to bring the water into a subcritical or supercritical state. In this manner, water-derived hydrogen is produced and the alcohol is converted to a corresponding carbonyl compound. The process is preferably carried out in an oxygen-free environment.
Abstract: There are provided microorganisms having a property of producing a lipid containing unsaturated fatty acids as constituent fatty acids and extracellularly secreting the produced lipid encapsulated in lipid vesicles, methods of screening said microorganisms, as well as methods of efficiently producing a fatty acid-containing lipid using said microorganisms. Furthermore, there are provided lipid vesicles encapsulating a lipid containing unsaturated fatty acids, and foods, cosmetics, and animal feeds comprising said lipid vesicles added thereto. Artificially treated microorganisms or microorganisms collected from nature are grown on a solid medium, and microbial strains that form lipid vesicles at the periphery of the colonies and/or microbial strains that, when cultured in a transparent liquid medium, make the culture liquid cloudy are selected.
