Abstract: A method of heating and/or homogenizing of various liquid food products by means of a steam-liquid injector (1) is disclosed. The method complies feeding of steam and a liquid product into a mixing chamber (3) through corresponding nozzles (2, 4) and then accelerating the flow of the product to a maximum speed depending on particular processing operating parameters. The acceleration is carried out without exceeding the speed at which the static pressure of the flow matches the saturation pressure of the product at the input temperature. The steam and liquid product are mixed within the mixing chamber (3) and then compressed to obtain condensation of steam within the product.
