    Abstract: A compact food frying machine having a vertically-oriented U-shaped pan for holding a heated liquid, an endless belt for carrying food items, multiple guiding elements spaced along the length of the belt, each including a number of parallel slats spaced adjacent to each other along the width of the belt, a feeding position, and an unloading position directly above the feeding position, and a guide member projecting and sloping up from the unloading position into the region where the guiding elements pass by, for allowing the slats of the guiding elements to pass through the guide member in an intermeshing relationship but retaining and guiding the food item to the unloading position after the food item has been carried through the heated liquid by the endless belt.

    Abstract: A method for processing meat from fowl is disclosed wherein a tough meat is subjected to dry steam at a pressure in the range of about 0.2 Kg/cm.sup.2 to about 0.5 Kg/cm.sup.2, said steam having a temperature in a range of 100.degree. C. to 130.degree. C. for a period of about 30 minutes to one hour. This method advantageously provides meat which is tender but not wrinkled and does not have peeling of the skin.

    Abstract: A frying device for foods comprises a metallic frying member, cast from an aluminum alloy, with a plurality of oil-filled pores and cavities of specified defined size which act to prevent the food being fried in the device from sticking to the metal frying member. The walls of the frying device are provided with a plurality of openings to enable cooking gases to escape. Less than 50% of the surface oil as is used in conventional roasting devices is required in my device.The device and method are particularly adapted for the production of multilayered food products, where a plurality of layers of a product are automatically laid down in timed sequence within the roasting device.
