    Abstract: An apparatus for cleaning a food-processing machine having cylindrical rolls disposed along a curve, each of the rolls having a peripheral working surface for contacting food products and an axis about which each roll rotates. A drive rail is mounted parallel to the axes of the rolls and extends the length of the rolls. A spray bar slidably mounts to the drive rail, extends adjacent the rolls, and has at least one nozzle for spraying liquid onto the working surfaces of the rolls to clean them of debris. A prime mover drives the spray bar along the drive rail parallel to the axes of the rolls while spraying the rotating rolls.

    Abstract: A distributor valve for a hydrocutting system. The valve automatically diverts a flow of liquid and solid food products flowing from a source to one or both of two destinations. An entry conduit receives the suspended food products in liquid, and an angled plate deflects the food products downwardly. The food products and liquid enter a drum that is perpendicular to the entry conduit, causing rotational circulation in the drum. The food products and liquid flow into one or both of two longitudinally opposite outlets, depending on whether the path downstream of the outlets is flowing. Upon actuation of a valve on one side, or essentially complete blockage of one side, the fluid and products flow to the other side automatically. No moving parts are needed in the valve to change the flow path; the only change is to the flow downstream, which automatically affects the flow in the valve.

    Abstract: A peeling apparatus and method using rotating rollers as a peeling bed includes a mechanism that moves food products through the peeling bed. The mechanism has multiple walls mounted to a continuous loop that is driven over the peeling bed to define cavities between each adjacent pair of walls. The walls' lower edges are spaced close to the rollers to prevent food products from exiting a cavity. One or more of the walls may have cleaners, such as spray nozzles connected to high pressure liquid, to clean particles from the rollers. The nozzles spray the particles off as the spray nozzles pass over the rollers during normal operation of the peeling apparatus.

In the acceleration and deceleration tubes, the curvature of the sidewall is non-linear along its length, and the water flowing therein accelerates, positively or negatively, at a substantially constant rate. In an embodiment, there is a second curvature, which may be offset from the first curvature by about 90 degrees, that accelerates the water at a second, different substantially constant rate, in order to align the food product both lengthwise and rotationally to a desired orientation.

    Abstract: A cutting assembly for use in a hydro-cutting system in which water and food products are conveyed through tubes and the food products are sliced into smaller pieces. The cutting assembly includes multiple disks and U-shaped blades. Legs of the blades are mounted between the substantially parallel disks on opposite sides of the disks, thereby holding the blades in place. A rotationally-driven motor driveshaft extends through the assembly and the assembly is mounted in a tube. When the water and food products are conveyed into the cutting assembly, the rotating assembly slices pieces from the food product, and the pieces are separated from the water for later use or processing. The water can be used in another slicing cycle.
