  • Patent number: 6620447
Abstract: The present invention is related to the manufacture of a baked product with the product being enclosed in a wrapper. The product can be given good qualities including that desired surface portions of the product can be provided a crust similar to that achievable under open-pan baking conditions. The invention is implemented so that the dough is dosed into the baking volume formed by said sealed wrapper, subsequently baking the dough in said baking space formed by said sealed wrapper. In the wrapper, the wrapper area overlying the intended crust-formation area of the baked product is made of a moisture-permeable porous material capable of passing water vapour through its structure.

  • Patent number: 6610339
Abstract: A portable container for storing an edible liquid separate from an edible dry component is disclosed. The container permits a user to easily mix the edible liquid with the dry component in a readily transportable container without spilling the contents. A portable container includes an outer vessel having a least one internal projection and an inner vessel received within the outer vessel. The inner vessel is rotatable within the outer vessel and includes a removable top and at least one opening covered by a frangible membrane. A sealing member seals the outer vessel to the inner vessel. When the inner vessel is rotated within the outer vessel the at least one internal projections ruptures the frangible membrane and provides communication between the inner vessel and the outer vessel. An edible liquid is stored within an inner space defined between the inner vessel and the outer vessel and a dry component is stored within the inner vessel.

  • Patent number: 6589583
Abstract: The present invention provides freezer-to-oven dough products, as well as methods for preparing the dough products. Specifically, the dough products of the present invention include a chemical leavening system comprising a plurality of chemical leavening acids having different temperature ranges within which they are active as chemical leaveners. Such a chemical leavening system provides for the staged rising, i.e., rising that occurs over a wide temperature range and thus during a substantial portion of the cooking cycle, of the dough products of the present invention when cooked. By providing frozen dough products with such a leavening system, the need for a preproofing step prior to freezing, a thawing step or an intervening proofing step prior to cooking is avoided, and yet, the dough product is capable of substantial expansion upon cooking, thereby producing a cooked dough product with excellent visual and organoleptic properties.

  • Patent number: 6579549
Abstract: Control of the texture of meat cuts is accomplished so as to minimize the development of mealy, wet and soft texture of the meat cut, particularly when used in combination with a sauce having a relatively low pH of about 4.5 or below. The meat cuts are first fully cooked and chilled and then inserted, together with a low pH sauce, into a pouch and hermetically sealed within the pouch and stored under refrigerated, non-frozen conditions for at least 60 days without deterioration.

  • Patent number: 6572911
Abstract: An oven utilizes a convective heat transfer mechanism for cooking the food products where the oven provides heated gas in the form of columns or streams and which are directed to at least one surface of a food product within the oven. Moisture, in the form of steam, is introduced within the convective heat transfer mechanism. Thus, an effective moisture environment can be created at and around the surface of the food product that is cooked under the influence of the heated gas/steam columns or streams. More preferably, steam is introduced within the convective heat transfer mechanism for creating a moisture environment substantially surrounding the entire food product during its baking.

  • Patent number: 6572904
Abstract: A method and package for packing food products with a calorie-division indicating function is disclosed. In the method, a food product is preliminarily sectioned into a plurality of portions while indicating calorie content on each of the portions prior to packing the product with a package. Thus, people are allowable to consume one or more measured portions containing a desired number of calories. On the other hand, a package for food products are sectioned into a plurality of segments while indicating calories on each of sectioned portions of a packed food product. In the above package, the calorie content is expressed separately on each of the sectioned portions while indicating the calorie content of each portion or total calorie content of partially divided portions. The invention also provides a container for food products, having a calorie scale on its sidewall. In such a case, the calorie scale indicates calorie content of portions of a food product within the container.

  • Patent number: 6572909
Abstract: A plastic container has a base and a lid hinged together by a hinge. The hinge has a series of relatively thick sections joined together by a series of relatively thin sections. The thin sections are sufficiently thin to be severed upon an initial folding of the hinge. The thick sections are sufficiently thick to remain at least partially intact during the initial folding. The container may be filled with product and closed with the hinge becoming partially severed and weakened and may be later opened with the hinge becoming completely severed to separate the base and the lid.

  • Patent number: 6551646
Abstract: A process for producing a soft frozen fruit flavored dairy product is disclosed. The process requires two freezing steps wherein a flavored concentrate mix is frozen before milk fat is added to the mix. The flavored concentrate mix together with the contained milk fat is then frozen again without mixing or stirring to allow ice crystals to form, preferably of small size, to develop a mouthfeel with components of the fruit flavor.

  • Patent number: 6506429
Abstract: Bags for produce or the like are prepared by advancing a thermoplastic sheet and a mesh sheet, each having an upper edge, along a process line. The plastic sheet has a bottom portion which is folded to define a lower edge of the thermoplastic sheet at a fold line. One seals the folded portion of the solid-wall thermoplastic sheet to a lower edge of the mesh sheet. Transverse slits are then formed in the sheets, and the sheets are heat sealed together near edges of the slits to form separate bags between the slits. The slits extend across both lower edges of the bags, but are preferably spaced from the upper edges. One drops produce between the sheet upper edges into the bags, and the bags are then heat sealed adjacent to the upper edges thereof, and subsequently separated by cutting. A novel heat seal die is also shown.
