    Abstract: An electric gaff hook device includes an elongated pole having at least one hook that is positioned along the distal end. Each of the hooks including a curved shape, a sharpened tip, and a plurality of electrodes. A controller, user interface, power source and power output unit are provided along the pole. The power output unit receives power from the power source and sends amplified power to the plurality of electrodes based on a command from the user interface. The power discharged by the electrodes functions to stun and immobilize a fish for between about 1 and 3 minutes. A spike is provided along the distal end of the pole and includes a plurality of apertures forming a channel for receiving an elongated wire to euthanize and perform ike jime on the stunned fish.

    Abstract: A cutting apparatus and method are provided for final separation of fish fillets from fish transported, tail-first, in a transport direction along a transport path, and which have belly and flank cuts. The apparatus includes a frame structure, a transport apparatus driven by a drive element, having at least one receiving element for a fish, and a cutting blade assembly with two knife heads each with a driven circular blade. The knife heads are on opposing sides of the transport path such that fish transport between the blades. To alter the blade distance, the knife heads are movably mounted on the frame structure. The blade assembly is assigned at least one sensing element. Each sensing element is on the knife head downstream of the blade cutting edges, which are directed counter to the transport direction, and protrudes beyond the respective edge, viewed in a direction transverse towards the central.

The combination as claimed including the ultrasonic knife can perform a meat cut while penetrating the meat with less force than the typical penetration that occurs when using a traditional knife. The combination as claimed including the annular blade knife implement can remove the tender meat portion for the keel bone and posterior sheath.
