Abstract: A method for conditioning a food in connection with a treatment, a processing, or the production of the food in an air environment in an open conditioning space, whereby a) climatic data influencing the food in the conditioning process are captured during the conditioning process in the surroundings of the food within the conditioning space, wherein, as climatic data, the conditioning variables of temperature, absolute water content and air pressure are captured as measured values and are compared with food-related setpoint values for the temperature change process, and b) if a deviation of the measured value from the setpoint value associated therewith is detected, the surroundings of the food in the conditioning space are influenced in order to adjust the measured value to the setpoint value.

Abstract: A leavening apparatus for leavening dough pieces comprises a leavening chamber for receiving dough pieces and a climate control module for controlling the climate in the leavening chamber for the leavening process. A control device for controlling the leavening process according to climate data detected in the leavening chamber is paired with the climate control module. The climate control module comprises a device for creating an air stream and a device for creating water aerosol to be entrained by the air stream. The leavening chamber has an upper inlet for the climate control media ‘air’ and ‘moisture’ provided by the climate control module, and a lower outlet the opening width of which can be adjusted. During operation, an air stream generated by the climate control module is introduced via said inlet into the leavening chamber, said air stream flowing out of the outlet of the leavening chamber.

Abstract: A ventilation system comprising a conveying unit for conveying a supply airstream into an interior space through at least one air outlet channel, and at least one exhaust air opening which may have an adjustable opening width. The at least one air outlet channel arranged at a distance from the at least one exhaust air opening, such that an airstream is established during operation therebetween in the interior space. The ventilation system is paired with a humidifying device to supply humidity into the interior space, said humidifying device comprising a generator for generating an aerosol from a liquid with droplets sized to be carried by the airstream, and at least one aerosol outlet channel arranged in the interior space such that the aerosol is captured by the airstream. A method for conditioning an interior space using at least one or more such ventilation systems is further described.
