    Abstract: L-fructose may be made by oxidziing L-mannitol with a polyoldehydrogenase from species of the genus Gluconobacter and Acetobacter. In particular, L-fructose may be formed by fermentation of L-mannitol using Gluconobacter oxydans ssp. suboxydans or Acetobacter pasteurianus.
