    Abstract: A novel milk coagulating enzyme is produced by cultivating a yeast of the group Cryptococcus albidus and its variants aerius and diffluens on a culture medium containing assimilable carbon, nitrogen and trace nutrients at a temperature between 15.degree. C. and 40.degree. C. under aerobic conditions, and at a pH of between 3.0 and 8.0. The enzyme is recovered from the culture medium, for example, by salting-out, dialyzed and freeze-dried. The preparations obtained are characterized by high milk-clotting activity with very low proteolytic activity.
