    Abstract: A proteic inhibitor of the pectinesterase enzyme has been extracted from fruit, in particular from the kiwi (Actinidia chinensis). The inhibitor is constituted by a single polypeptide chain, having a molecular weight of 28,000 daltons and an isoelectric point not higher than 3.5. The pectinesterase inhibitor may be used as an adjuvant for stabilizing vegetable juices and concentrates.
