Abstract: Described are maltol-2-methyl pentenoates having the structure: ##STR1## wherein R is a secondary pentenyl moiety having one of the structures: ##STR2## AS WELL AS METHODS FOR PREPARING FOODSTUFFS, FLAVORING COMPOSITIONS FOR FOODSTUFFS, CHEWING GUM COMPOSITIONS, FLAVORING COMPOSITIONS FOR CHEWING GUM, MEDICINAL PRODUCT COMPOSITIONS AND INGREDIENTS FOR MEDICINAL PRODUCT COMPOSITIONS BY INCLUDING THEREIN SAID MALTOL-2-METHYL PENTENOATES WHICH AUGMENT OR ENHANCE THE FLAVOR OR AROMA OF SAID COMPOSITIONS.

Abstract: The 2-acyl-5-substituted thiatetrahydrofuran-4-ones of our invention have organoleptic properties which make them useful for augmenting or enhancing the aroma or flavor of foodstuffs, tobaccos and the aroma of perfumes and perfumed articles.
