    Abstract: The invention relates to a vegetable casing and a production method thereof. The inventive casing is characterised in that it essentially comprises a matrix of non-water-soluble alginates which is reinforced with vegetable fibres or polysaccharides in order to increase the mechanical and thermal resistance thereof. The invention is suitable for use in the agri-food industry and, in particular, for transforming meat products into delicatessen products, such as foodstuff casings for sausages.
