Abstract: A method and a cutting system are provided for opening belly and breast of animal carcasses. The system includes a first cutting device capable of cutting open the belly and breast along the ventral side of an animal carcass. A guide pin is capable of being directed along the inside of the carcass abdominal wall and capable of providing a first force on the inside of the carcass belly. At least one pressure device is capable of providing a second force on the outside of the carcass belly, breast and/or neck. The pressure device is fixed or movable at least in the direction of the first and second force.

Abstract: A bung driller is provided for cutting free the anal opening and rectum end of an animal carcass by cutting around the anal opening and rectum end. The bung driller includes a longitudinal, drilling tube with an open cutting end, a mandrel centralized inside the drilling tube, and a bung holder located inside of the drilling tube and surrounding the mandrel. Contamination of skin surface and meat surface by fecal matter is a problem when cutting free the anal opening and rectum end of a carcass. The bung holder located inside of the drilling tube provides a holding force to the skin surface around the anal opening and makes a volume wherein fecal matter escaping from the intestine is caught.

Abstract: A method for detaching and enclosing an outer end of the rectum of a carcass comprises the processing steps of: releasing the outer end of the rectum; pulling the released outer end of the rectum out of the carcass; placing the pulled out outer end of the rectum onto a sheet of covering material; and positioning the sheet of covering material around the pulled out outer end of the rectum such that the sheet of covering material encloses the outer end of the rectum. A device is provided for detaching and enclosing an outer end of the rectum of a carcass.

A further slaughtering tool is a cleaving blade (23) to split the pubic bone of the carcass. The cleaving blade is attached to the shield that partially covers the rotatable cutting blade.
