    Abstract: The low calorie humectant is made from a humectant, erythritol and water. The addition of erythritol provides a synergistic increase in water retention to the humectant. A food product is formed by first combining erythritol with the humectant or the low molecular weight carbohydrate such as glycerol, sucrose, dextrose or fructose and water to form the low calorie humectant. Then, the other food ingredients are combined with the low calorie humectant.
