    Abstract: The process for pairing a fat continuous spread having from about 30 about 80% fat and having a trans fatty acid level of less than about 10% is described. An interesterified hardstock as described herein is combined with liquid oil to form a fat phase. The fat phase and an aqueous phase are combined to form an emulsion which is crystallized to form substantially beta prime crystals in the C-unit. The beta prime containing crystal containing emulsion is the emulsion exiting the initial A-unit at a throughput of the emulsion through the entire production line of x kilograms per hour, a residence time of the emulsion in the crystallizing (C-unit) of y minutes and the recirculation flow rate of the emulsion recirculated into the cooled partially crystallized emulsion of 0.2 x to 10 x to form the fat continuous product.

    Abstract: The present invention pertains to a process for the production of polyol fatty acid polyesters by reacting a reactant mixture of polyol, a fatty acid lower alkyl ester, a transesterification catalyst and an alkali metal soap emulsifier. The process comprises removing non-dissolved alkali metal soap from the reaction mixture at a degree of transesterification of more than 60%, preferably 65-90%, and recycling the alkali metal soap that is removed during the transesterification to the starting reactant mixture. The invention is applicable both to a batch-wise polyol polyester synthesis and to a continuous synthesis.

    Abstract: In a process of preparing a tea extract, the extract is adjusted to 20.degree.-80.degree. C., treated with tannase at pH=4-7 and then subjected to ultrafiltration at 2.degree.-90.degree. C. using a membrane with an average molecular weight exclusion point of at least 5000 Daltons (preferably at least 30,000 Daltons). The extract may finally be subjected to an additional filtration, preferably microfiltration. Also an instant a cold-water soluble tea powder or granulate is claimed.
