    Abstract: The present invention relates to a method for treating honey which is at least partially crystallized, with a view to obtaining a honey which can be stored for several months at ambient temperature while remaining liquid and transparent. The method is based on the separation and extraction of at least a part of the glucose crystals present in the honey. This extraction can be carried out by centrifugation or by ultrafiltration. This method excludes heating the honey at a high temperature for a long period of time, and therefore makes it possible to preserve all the properties thereof.
