    Abstract: Disclosed are fiber-containing nutritional powders comprising nutrients and a total dietary fiber component, wherein the total dietary fiber contains added, spray dried, fiber, and wherein at least about 50% by weight of the spray dried fiber is water insoluble. Also disclosed are improved methods of making nutritional powders by (A) preparing an aqueous liquid containing nutrients and added fiber, wherein at least about 50% by weight of the added fiber is water insoluble; (B) homogenizing the prepared aqueous liquid at a selected homogenization pressure; and (C) spray drying the homogenized liquid to form a nutritional powder, which can be formulated or reconstituted into a nutritional liquid. The nutritional formula is more effective than conventional fiber-containing, ready-to-feed, nutritional liquids in treating infants affected by colic, diarrhea, or excessive spit-up.
