Abstract: An organic growth substrate, which supports mushroom growth from an inoculum of the species to be grown, is disposed within a growing apparatus impervious to microbiological contamination from an external environment and operationally associated with an environmental control apparatus. The environmental control apparatus modulates air, water, thermal, and light inputs to, and outputs from, one or more growing apparatuses to establish and maintain the desired environment within the growing apparatus. The system operates via a plurality of sensing, digital processing and mechanical components governed by software algorithms and operator input. A lyophilizer freeze dries harvested mushrooms for storage stability purposes. The system is configured to exchange information with the operator via a user interface and wireless connection to remote devices.

Abstract: A self-contained temperature controlled system and apparatus is disclosed. Example embodiments of the invention provide a system for operating a self-contained temperature controlled apparatus comprising at least one compartment, a predetermined temperature condition for the compartment, a sensor for detecting the temperature of the compartment, and at least one device for controlling the temperature of the compartment so that the predetermined temperature condition is met, wherein the system optionally comprises an on-board electrical power source. In some embodiments, the device for controlling the temperature of the compartment comprises an on-board refrigerant source.

A method of preparing a custom food product under the direction of a customer includes placing a customer-selected substrate on a scale of custom food product preparation table, placing customer-selected ingredients on the substrate in customer-selected amounts and customer-selected areas, and calculating and displaying the cost of the custom food product to the customer as the customer-selected ingredients are placed on the substrate. Each ingredient is assigned a cost per unit of weight and, as the ingredients are utilized, the cost of the food product is calculated and displayed via a display associated with the table. A customer may be provided with a record of the ingredients of the custom food product and may include an image and/or name of the custom food product.
