    Abstract: The invention provides a gas infused milk product, wherein the gas infused milk product comprises a lactose hydrolyzed concentrated milk infused with a soluble gas. The invention also provides methods of making such a product. Such methods include providing milk (skim milk, 1% milk, 2% milk, whole milk, half and half, cream or other milk product) and concentrating and hydrolyzing the milk with lactase to from a lactose hydrolyzed milk concentrate. The milk can be concentrated in vacuo (in a vacuum) in order to remove the dissolved gasses from the lactose hydrolyzed milk concentrate. Soluble gasses, such as nitrous oxide or carbon dioxide are then introduced into the lactose hydrolyzed milk concentrate to form a gas infused milk concentrate. In one aspect of this invention, the gas infused milk concentrate is then introduced into a stream of carbonated or still water resulting in a gas infused milk beverage.

    Abstract: A method, apparatus and system for low-temperature hot-filling of a flowable food product into a sterilized container is disclosed herein. The low-temperature hot-filling temperature preferably ranges from 60° C. to 82.2° C. The method applies a solution of hydrogen peroxide onto the packaging and an alkaline solution to react with the hydrogen peroxide to generate hydroxyl radicals to kill microorganism. The use of an alkaline solution allows the sterilization process to proceed at a lower temperature and a faster rate. A solution of sodium hydroxide is the preferred alkaline solution. The temperature of the process is preferably below 100° C.

One of the streams is a homogeneous component of the final product and the other stream is a heterogeneous component. The invention involves asceptically processing both streams, then using the homogeneous component or carrier fluid, to partially cool the heterogeneous food product. The invention allows for the holding of the heterogeneous component for a predetermined residence time at a predetermined temperature as set by FDA regulations. The final product may be packaged on an aseptic packaging machine.

    Abstract: A method and apparatus for sterilizing packaging through irradiation with an excimer ultraviolet lamp which may be integrated on a packaging machine. The excimer ultraviolet lamp emits radiation at a substantially monochromatic wavelength within the ultraviolet band of the electromagnetic spectrum. The excimer ultraviolet lamp is composed of a quartz shell containing one of the following gaseous compounds: Ar.sub.2, Kr.sub.2, Xe.sub.2, ArCl, KrCl, KrF or XeCl. The KrCl gas excimer ultraviolet lamp which generates a wavelength of 222 nanometers is of particular interest for the present invention. In one embodiment, the lamp has a central aperture for flowing through a cooling fluid to remove heat from the lamp. If the excimer ultraviolet lamp is integrated on a form, fill and seal machine, the cooling fluid may be the desired contents filled into a container fabricated on the form, fill and seal machine.
