In preparing the low GI food containing said formulated pectin of the present disclosure, only a small amount of said formulated pectin is required to be added to the raw material, and then customarily cooked or baked, allowing little effect on the processing, and almost no impact on the food taste and status. The food can be effective over a wide range of cooking temperatures.
