    Abstract: Production of orange juice is described. Raw orange juice is ultrafiltrated in an ultrafilter, thereby obtaining a retentate and a permeate. Only the retentate is pasteurized in a pasteurizer. The pasteurized retentate and the permeate is mixed in a mixing unit. A minimization of enzymes and microorganisms is thereby obtained in the orange juice.

The UF permeate is nanofiltered in a nanofilter, thereby obtaining a NF retentate and a NF permeate. The UF retentate and the NF permeate are mixed and then pasteurized in a pasteurizer. The pasteurized mixture forms the orange juice, which is filled in packages. An orange juice having a reduced sugar content while still providing a favorable taste and color is then obtained.

The system further comprises an inert-gas supply and a mixer for supplying and mixing in inert gas into the liquid in the first piping. The vacuum pump is controllable to maintain a separation pressure in the separation vessel corresponding to a pressure at or slightly above the saturation pressure.
