    Abstract: A rapid joint detection device and detection method for deterioration degree of fried oil belongs to the technical field of rapid detection of food quality and safety. The acid value and the peroxide value of the fried oil are used as major indexes for measuring the deterioration degree of the fried oil to make a micro-thin layer chromatography test paper strip that can develop colors according to different deterioration degrees of the fried oil; through the color development analysis of the test paper strip, and in combination with the dielectric constant value of the fried oil, the color difference value of developed colors of the test paper strip color is converted into the data of the acid value and the peroxide value data of the fried oil.
